Role & Responsibilities
- Oversee personal rotas and daily and weekly work schedules for the section
- Maintain consistent production levels to meet Alfred's Club requirements
- Adhere to portion control and plating instruction standards at all times
- Ensure correct storage of mise-en-place, food products, and non-food items with proper dating and stock rotation
- Minimize food wastage without compromising service quality
- Attend training sessions and conduct on-the-job training for Commis Chefs
- Maintain section cleanliness and conduct thorough end-of-shift deep cleaning
- Ensure correct handling and maintenance of all section equipment and utensils
- Foster a positive working atmosphere with colleagues
- Maintain exemplary personal hygiene and uniform standards
- Comply with fire safety, evacuation, health and safety, and statutory legislation requirements
- Perform ad hoc duties as required by operational needs
Qualifications
- Proven experience as a Chef de Partie or equivalent senior kitchen position
- Comprehensive knowledge of food safety and hygiene regulations
- Proficiency in section management and kitchen operations
- Demonstrated ability to train and supervise junior kitchen staff
Skills
Experience
Extensive experience working in fine dining or members' club kitchens, with a proven track record in section leadership and team management.
Education
Culinary qualification or apprenticeship (NVQ Level 3 or equivalent in culinary arts preferred).
