Role & Responsibilities
- Lead and mentor the kitchen brigade, setting a standard of excellence through coaching, inspiration and motivation
- Manage day-to-day kitchen operations including production planning, preparation standards and food safety compliance
- Monitor goods received from internal and external vendors; verify quality standards and production output
- Oversee effective storage, ordering of food stock, and planning production levels to minimize wastage
- Conduct timely stock checks and maintain accurate administration records using SAP and related systems
- Ensure strict adherence to all Health & Safety regulations, food safety procedures and internal compliance protocols
- Build and maintain effective relationships with support functions including Food Halls, Restaurants, Food Safety, Distribution and HR
- Report to and assist the Senior Head Chef in all managerial duties
Qualifications
- Proven track record at Sous Chef level or above in a fine dining establishment
- Exceptional interpersonal and leadership skills demonstrated through team management
- Strong knowledge and passion for food and drink
- Meticulous attention to detail reflected in paperwork, organisation and inventory management
- Competency in PC literacy including Microsoft Word and Excel, with SAP proficiency preferred

Strong track record of hospitality experience within fine dining at Sous Chef level or equivalent senior kitchen position, with demonstrated ability to manage kitchen brigades and maintain high production standards.
