Dorchester Collection is hiring a permanent, full-time Food and Beverage Cost Controller for The Dorchester and 45 Park Lane in London. The role oversees food, beverage and tobacco stock controls, reconciliations, cost reporting, audits and accounting-system data, while supporting month-end reporting and advising internal stakeholders.
Role & Responsibilities
- Maintain control procedures for all balance-sheet stock items, including food, beverage and tobacco.
- Record and reconcile monthly food and beverage purchases and issues, and maintain appropriate records.
- Assist with and supervise monthly beverage stocktaking.
- Help safeguard company assets.
- Produce accurate cost and statistical reports for management.
- Identify and correct procedural irregularities in recording, storage and handling of stock.
- Reconcile balance-sheet stock items and produce accurate cost and statistical data for management.
- Work with the F&B Cost Controller on daily food flash reports and menu and recipe costings, in line with departmental policies and procedures.
- Audit products received in the loading bay and review prices on invoices.
- Flag variances against budgeted costs and advise management on prompt corrective action.
- Carry out monthly F&B stock-control audits in line with company policies and procedures.
- Develop and maintain an efficient data-storage system for business information.
- Update, monitor and maintain data in Adaco and Micros.
- Identify and correct deficiencies in outlet operating procedures.
- Perform daily and weekly audit checks in operational areas to prevent misappropriation or misuse of company assets.
- Ensure financial information is used and distributed efficiently to business users.
- Assist the Management Accounting team with month-end reporting.
- Support database setup and procedure alignment for Coworth Park and 45 Park Lane.
- Provide cover for other accounts team sections as required.
- Participate in projects and business-wide activities.
- Report deficiencies in point-of-sale software capabilities to the IT department and external IT support teams.
- Communicate effectively and provide day-to-day financial services to managers and colleagues.
- Participate in meetings and internal or external training courses.
- Cooperate with and support colleagues in pursuit of team goals.
- Guide and advise internal stakeholders on F&B cost-control matters.
Qualifications
- HND in business and accounting, or hotel school education.
- Studying towards a professional accounting qualification is desirable: CIMA, ACCA, ACA or BAHA.
- At least 3 years' experience in another accounts-department role within a similarly large organisation.
- Knowledge of operational practices in a similar-sized establishment.
- High level of computer literacy.
- Excellent attention to detail.
- Core understanding of stock and cost-control techniques.
- Basic understanding of management and financial accounting techniques.
- Knowledge of the design and implementation of stock-accounting control processes.
- Ability to write clear, targeted and concise management information reports.
- Ability to demonstrate the values of passion, personality, respect, working together and creativity.
